This wonderful soup is a great source of healthy and easy to digest protein. Split yellow mung beans are traditionally used in Ayurveda for healing & restoring the health of the intestinal villi . Used often in healing & rejuvenative treatment such as pancha karma - it restores the gut micro-biome and helps the digestive system to rest & restore. Top it with ghee, or cilantro pesto for added flavor. Yum.
Spiced Mung Bean Soup
6 cups of water
1 1/2 cup of split yellow mung beans (rinsed and drained)
2 tsp of chopped fresh ginger
1 1/2 tsp coriander
1 1/2 tsp turmeric
1 tsp cumin
1/2 tsp dried ginger
1/2 tsp salt
Boil water, add spices, salt, ginger, and mung beans.
Let boil for a minute, then turn down heat. Cover and simmer - stirring occasionally til cooked. 30-40 minutes. Top with veggies & ghee or pesto.
